Fish
1 tablespoon butter
1 onion chopped
1 clove garlic minced
1/2 cup bread crumbs
1/3 cup chopped parsley
2 tablespoons lemon juice
1 teaspoon grated lemon rind
1/4 teaspoon salt
Pinch pepper
4 sole fillets ( about 1 lb.)
In 4-cup measure or microwave-safe bowl, microwave butter at High for 30 seconds or until melted. Add onion and garlic; microwave at High for 1 to 2 min. or until softened, stirring once. Stir in bread crumbs, 1/4 cup of the parsley, 1 tbsp of the lemon juice, rind, salt and pepper; spread bread crumb mixture evenly over fillets. Starting at thin end, roll up fillets jelly-roll style; secure with toothpicks.
Arrange rolled fillets in circle around outside of shallow microwave-safe dish. Sprinkle with remaining lemon juice; cover with vented plastic wrap and microwave at High for 4 min. or until fish flakes easily when tested with fork. Sprinkle with remaining parsley. Makes 4 servings.
